Simple Peppermint Sugar Cookies

Today is the annual holiday treat exchange at the office. I love this day! This gives everyone an opportunity to bring in their finest holiday creation and share with the whole group. Plus, it gives you an opportunity to try out various recipes that you hadn’t tried before. Showcased this year were traditional peppermint items including cookies, chocolates and brownies. In addition, white chocolate cranberry cookies, peanut butter fudge, pistachio linzer cookies, red velvet cake pops, butter finger cookies and various holiday colored cupcakes.

I made peppermint sugar cookies and chocolate peppermint sea creatures (which matched our door decorating creation). Here is my peppermint sugar cookie recipe, quick and easy for anyone to make last minute for a party or gift!

Peppermint Sugar Cookies

Ingredients

  • 1 package of refrigerated sugar cookie dough
  • 1/2 teaspoon peppermint extract
  • 1 can (4 oz) of vanilla frosting (you can choose whichever flavor you prefer)
  • **Optional: 1 teaspoon of red or green food coloring
  • Peppermint candies or candy canes (crushed)

Directions

  1. Cook the sugar cookies as instructed by the packaging
  2. Remove from heat and let cool for 5 minutes
  3. Open frosting and mix in peppermint extract (as well as food coloring if desired)
  4. Smudge frosting on each cookie and sprinkle crushed up candy pieces on top
  5. Refrigerate for 2 minutes so candy and frosting set
