Hi, it’s Chris here from Celebrations At Home. By now tailgate season is in full swing and you may be looking for new food ideas for game day. I find that when I host a party {homegating or tailgate} it’s a good idea to serve some classic dishes but add in one or two new recipes as well.
One of the staple dishes we serve at almost any casual gathering is this baked corn dip. It may sound strange at first but this combination of sweet corn, creamy cheese, and spicy peppers has been known to make grown men beg for more. Give this one a try and you may add it to your classic collection too.

Baked Corn Dip
16 oz bag frozen sweet yellow corn, thawed
10 oz cream cheese
1 stick butter {1/2 cup}
6 oz shredded pepper jack cheese
1/2 of a 4 oz can diced jalapenos
1 teaspoon garlic salt
Place butter, and cream cheese in dish and place in 350 degree oven. Let melt for about 20 minutes. Stir in corn, pepper jack cheese, garlic salt, and diced jalapenos. Place back in oven for 30 minutes, stirring occasionally. Take out when bubbly.
Serve with tortilla chips.

Even when serving appetizers I like to create well-rounded menu options, that’s why I wanted to incorporate “mini buckets” of fried chicken strips. As I’ve mentioned before, most tailgates I’ve been to include a large bucket of fried chicken from a drive through restaurant. These chicken strips were also from a restaurant but look so much nicer when placed in small disposable containers. Each person can have their own container or share.

For even more variety, offer up cut veggies with a dipping sauce. There’s no reason you can’t be a little healthy on game day!
