Breakfast Brunch Casserole

Love entertaining house guests, but never quite sure what to ma guke them for breakfast in the morning? This Breakfast Brunch Casserole has been a favorite for the sleepy heads coming out of our guest room for years. It’s easy, hearty and delicious, and best of all – it can be prepared a day a head of time, making your hosting job even easier!

Ingredients

  • 1 pound ground sausage
  • 8 cups shredded (hash brown style) potatoes
  • 6 eggs
  • 2 cups milk
  • 2 cups shredded colby jack cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

(Serves up to 8 hungry house guests.)
Directions

  1. Brown ground sausage in a skillet until thoroughly cooked through, and drain excess grease.
  2. Lightly oil a 9×13” (or larger) casserole dish and fill it with 8 cups of shredded potatoes. You can either buy a bag of frozen pre-shredded potatoes, or quickly shred them up yourself using the shredding blade of a food processor.

  3. Next, sprinkle approximately 1 cup of cheese evenly over the top of the shredded potatoes. Layer cooked sausage over the cheese, and finish with the remaining cup of cheese sprinkled evenly over the top.
  4. In a large bowl, whisk together eggs, milk, salt and pepper.

  5. Pour egg mixture evenly over the top of the entire hashbrown/sausage/cheese dish.

  6. Cover dish with aluminum foil and either store in the refrigerator for up to 24 hours, or bake immediately. Bake COVERED at 350˚ for 55-60 minutes, or until a knife inserted in the center comes out clean. (Note: This dish may take slightly longer to bake up if it has been refrigerated first.)
  7. Serve it up and enjoy!
