Tilapia Piccata Recipe

Winter is a wonderful time to indulge in comfort food, and not all of it has to be heavy or unhealthy. This easy and delicious Tilapia Piccata recipe will warm you up without weighing you down! Tilapia is low in saturated fat and calories, and is an excellent protein source. It’s also a very easy fish to cook, so don’t shy away from this recipe if you’re not used to cooking fish. The lemon and white wine sauce is light and flavorful with capers adding a fun, salty pop of flavor with each bite. This is a great meal to serve up anytime for your family, or save it for a weekend dinner party and impress your guests!

INGREDIENTS

  • 1.5 lbs fresh tilapia fillets
  • 2 Tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 Tablespoon olive oil
  • 2 lemons
  • white wine (or you can also substitute chicken stock or white grape juice)
  • 1 Tablespoon capers, drained
  • 2 Tablespoons butter
  • Brown rice

DIRECTIONS

  1. Cook rice according to package directions.
  2. Rinse tilapia fillets and pat with paper towel to dry.
  3. Mix flour, salt and pepper in a shallow dish. Dredge tilapia fillets in flour mixture until both sides of the fillet are completely covered in a light dusting of the flour mixture.

  4. Heat olive oil in a large non-stick skillet over medium-high heat.
  5. Pan fry tilapia fillets until cooked through (about 2-5 minutes per side depending on fillet thickness). The fillets should flake easily when poked with a fork.

  6. Once cooked through, remove fish from pan and keep warm.
  7. Juice two lemons and pour juice into a glass measuring cup.

  8. Add an equal amount of white wine (or substitute) to measuring cup. (Example: If your two lemons yield you 1/3 cup of freshly squeezed juice, add 1/3 cup of white wine.)
  9. Stir in capers, and pour into the skillet used to cook the tilapia fillets, cooking for about 30 seconds.
  10. Remove pan from heat and stir in butter until melted.
  11. Serve tilapia fillets over rice with the lemon butter sauce poured over the top.
