Poppy Seed Muffins with Citrus Glaze

With springtime quickly approaching (hallelujah!), you might be hosting outdoor picnics, baby showers, spring parties, and other celebrations. One of my go-to recipes for springtime parties is poppy seed muffins with a citrus glaze. They always get rave reviews and make the perfect brunch or dessert treat. These muffins are very moist and bursting with bits of lemon and orange zest. Pair them with a delicious mimosa for a brunch treat!

You could easily make this into a loaf bread with the glaze as well. However you serve this recipe, it’s a crowd pleaser. It’s delicious for teacher gifts or neighbor gifts as well. I always like to keep few go-to muffin recipes in my “arsenal” for quick thank-you’s. This is definitely my favorite because everyone loves them!

Poppy Seed Muffins

Ingredients:

  • 3 cups all-purpose flour
  • 2 1/3 cups sugar
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons baking powder
  • 3 eggs
  • 1 ½ cups milk
  • 1 ¼ cups vegetable oil
  • 2 tablespoons poppy seeds
  • 1 ½ teaspoons vanilla extract
  • 2 teaspoons almond extract

Preheat oven to 400 degrees F. Thoroughly combine all ingredients in large mixing bowl until blended. Spoons batter into greased muffin tins. Bake until toothpick inserted comes out clean (15 minutes for regular muffins and 10 for mini muffins). Be sure not to overbake!

Yields: 24 muffins or 48 mini muffins

Citrus Glaze

  • ½ cup butter, melted
  • 3 ½ cups powdered sugar
  • 6 tablespoons orange juice concentrate, thawed and undiluted
  • 2 tablespoons lemon juice
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • Lemons & Oranges for zesting

Mix all ingredients together and beat until smooth. Spoon glaze on cooled poppy-seed muffins. Top with fresh lemon and orange zest.
