Sweet And Spicy Corn Dip Recipe

It’s time to share one more recipe for the fall season, and this one is great for tailgating or could even be incorporated into a Halloween party if you give it a fun {ghoulish} name. This sweet and spicy corn dip is inspired by a recipe I found on Pinterest that could be categorized as “retro.” It’s an interesting combination of ingredients {hello Doritos!} that is positively addictive! The sweetness comes from the corn, and the spicy comes from the spicy cheese Doritos flavor. Get the recipe below.

Sweet and Spicy Corn Dip

Ingredients

  • 2 – 110z cans yellow niblet corn, drained
  • 2 cups cheddar cheese, grated {grate your own, do not use pre shredded for this}
  • 1/2 cup mayonnaise
  • 1/2 cup ranch dressing
  • 1 medium red bell pepper, diced
  • 1/4 cup green onion, diced
  • 2 – 10oz bags Spicy Nacho flavored Doritos
  • Corn tortillas if desired

Directions

  1. Combine all ingredients together, except for chips.
  2. Use about 6-7 cups, or 3/4 of bag of the Doritos, and crush them with your hands as you sprinkle them into the dip. Mix well to incorporate them.
  3. Cover and chill for a couple of hours or over night so flavors combine.
  4. Serve with second bag of Doritos and tortilla chips.

I know these ingredients sound a little strange together, but trust me. They combine to make the most delicious dip with lots of flavor and texture. The color from the Doritos turns the dip slightly orangy so I think it would make an awesome Halloween dish. Give it a creepy name like “goblin dip” when serving.

FYI, you could half this recipe for a casual gathering. As written it makes a very large amount suitable for a pot luck or other big occasion.
